I'm a 61-year-old Canadian semi-retired media professional and I'm looking for a kibbutz where I can be a volunteer for about six months, or perhaps longer, preferably with access to an Ulpan. All the programs seem to be aimed at much younger folks. (The link to kibbutz.com.au is dead.)

you are right, that the Ulpan Kibbutz program is meant for people up to 28 years of age, but I have seen also older persons in this program - over 40 years of age...
I would suggest the following:
1) you can contact branch of Jewish Agency (Sochnut), which is closest to you - in Canada, they should be able to help to find the right program for you.
2) you may try to contact Kibbutz Malkiya - it is very friendly Kibbutz in the North, just on Israeli border with Lebanon - great people, great nature, great place for pioneers!
I was there for 1 year in the past and it was very nice and I can suggest it - I do not know, what is the present situation with their programs now, but they had Ulpan Kibbutz and also volunteer program. So, may be, this can be also one of the options...

how to ship belongings What does Customs allow or what items do they tax heavily. I have electronics, laptop, tablet, printers, I need as a writer, and also want some household items for an apt. with me. Want to give out blankets, soup, and bread to poor and shut-in Holocaust survivors too. Have Israeli friends, but don't want to bother them before I visit them. No idea who to contact for apt. search and for Customs requirements.
